Okay so I feel like it is against the rules for me to be a baking blogger and hate frosting cakes. When I was younger I would make a cake for anyone’s and everyone’s birthday. I would day dream of what they would look like, the layers, the piping, the perfectly smooth icing.

But it never comes out the way I want and I am always frustrated. So I have mostly given up. Probably not the lessen I was supposed to learn but I am okay with it. And thus, I love baking good naked layer cake with fluffy layers of sponge and frosting topped on each other. Once the last layer goes on *chef’s kiss* you are done.
Of course, though, everything needs a finishing touch. So this is where this glaze comes in! It is perfect for white and yellow cakes and especially any kind with fruit as the lemon compliments almost anything. And it is stunning- those poppyseeds!

So the next time you feel the urge to make a layer cake but don’t want to dive into a frosting debacle- remember this glaze! You can fill the cake with any kind of frosting and then just pour this over it and then slice and eat.
Lemon Poppyseed Glaze
makes enough for one cake
1 1/2 cups confectioners’ sugar
3 tablespoons lemon juice
2 teaspoons poppyseeds
Step 1
Sift sugar in medium bowl. Gradually add lemon juice, starting with 2 tablespoons, and whisk to combine until smooth. The mixture should be slightly thick. Whisk in poppyseeds. Pour over cake.
